Obituary of Joni Marie Soule

Our beloved Joni Marie Soule, age 57, resident of Littleton, Colorado, was called to our Heavenly Father on October 4, 2017.  

Joni passed peacefully at the home of her sister, surrounded by the love of her family.  Joni was born July 30, 1960 in Perry, Iowa to D.R. Middleton and Dee Rath.  She was preceded in death by her father, D.R. Middleton, and her grandparents, Ray & Pauline Middleton and Wayne Rath.

Joni is survived by her daughter, Valeri Soule; her mother, Dee Rath ; her grandmother, Eileen Rath; her siblings, Juli Middleton (Thomas Minnick), Jeri Middleton (Nancy Workman), Joi Stark and husband Brent; her nieces, Dani Jo Allan and husband Ryan, Kati Colby and husband Max along with other loving family and friends.

Joni attended the University of Northern Iowa and the University of Iowa earning two degrees, one in journalism and one in nutrition.  Her passion and vast knowledge of nutrition stemmed not only from her desire to educate and inspire others, but also from lifelong struggles with digestive issues.  She used her nutrition degree to open up her own business, Fortitude Foods.

Joni loved to hike in the Colorado mountains, listen and dance to live music, cook nutritious food for family and friends, and spend time with her treasured daughter, Valeri.  

Joni’s contagious smile and enthusiasm will be greatly missed by all who knew and loved her.  

A Celebration of Life gathering is planned for 4:00 p.m., Friday, November 3, 2017 at Windsor Presbyterian Church, 6301 University Ave, Windsor Heights, Iowa.  There will also be a celebration in Littleton, Colorado, with details to follow.  In leiu of flowers, donations in honor of Joni may be made to The Colorado Trail Foundation.
